I will always try to get a room where there is enough space to put the mattress(es) on the floor. I hate wrestling on beds because your movement is so restricted due to the danger of rolling off the bed and causing an injury.
Of course, it can be really difficult to know what kind of room to book in any particular hotel/motel because "space to put the mattress(s) on the floor" isn't one of the aspects they'll tell you about when you book it or at the front desk. ;-) In general, I find that rooms with two queen beds are more likely to have space on the floor than rooms with a giant king mattress.
For NYC Wrestlefest, the last couple years I got a room big enough to bring mats with me. Plan on doing the same for Toronto in a few months and NYC next year
I had a king bed at my hotel in Wrestlefest this past February, and it was perfect for grappling. No need to put the mattress on the floor - there probably won't be enough room for it.

I’m hoping to go to Wrestlefest in NYC and am 50/50 on which room to pick.

Usually book a 'disabled access' room, more space, certainly in UK.

That's a good point, and a strategy I used to use and had apparently forgotten about, since it's been so long since I booked a room for wrestling!
