I wouldn't call that a fetish (although I guess the term could apply to any hold), especially since it a common wrestling move – to control your opponent's hands. The entire match can be won or lost through that single movement alone.

It's a "fetish" when it becomes more than just a wrestling hold but also something exciting to do. For me it's that way and I guess the same for the others who made the comments above.
